My guest today is Carissa Hauck. Born and raised in Spearfish, South Dakota, she started brewing kombucha as a fun hobby during college. During her senior year, Carissa suffered a serious knee injury, which shattered her plans to start a career and move abroad. But her limited mobility meant more time for experimenting with kombucha brewing. Soon, her friends and families were raving about the flavors she created. So in 2018, she founded Scobi kombucha, Spearfish's first kombuchary with her roommate and good friend Bianca Hutzler. Today, Carissa and I are talking about what kombucha is, why it's good for your gut health and how to make it.
