For our purposes today, in this our How to Drink season, we three explore what Calvados is, how it’s made and why the bees are buzzing for Avallen.

I had the honor of naming our cocktail of the week, The Queen’s Knees.  For those who make cocktails often, it’s the Avallen take on the Bee’s Knees but invented by the Queen Bee herself, Stephanie Jordan.

INGREDIENTS 

• 30ml Avallen⁠⠀
• A teaspoon of your local Honey⁠⠀
• 1 dash orange bitters⁠⠀
• Top with Champagne⁠

METHOD

• Add ingredients (except the champagne) to a cocktail glass (martini/coupe style), 
• Stir with a teaspoon until the honey has dissolved. 
• Top with chilled champagne
• Add a small orange peel for extra dazzle.
