In Episode 140, we share three delicious quick Thermomix cookies and bickie recipes. With the school holidays upon us, we thought it was a great time to find ways to whip up a tasty and healthy snack that will keep the kids satisfied (and the adults too)! The challenge for this week was to make quick, healthy Thermomix cookies that all had a quick Thermomix tip associated with it, here’s what we came up with:
Recipe 1 – Salted Caramel Cookies from The Shrinking Hubby
How good is salted caramel! It’s even better when it comes in the form of quick Thermomix cookies! These are delicious. Everyone we got to try these bad boys loved them. There were a few added bonuses with these ones…
- They’re also really good as a bliss ball (which makes them even quicker!) As they are made from macadamias they are a bit oily so we would recommend coating them with some desiccated coconut or hazelnut meal.
- We made these twice and the second time round we only had about half of the required macadamias so we subbed in cashews and they worked beautifully.
- This recipe could easily be doubled.
- Save time by spooning out dough, and then do all the rolling at once. Will save a lot of hand washing!
Recipe 2 – Thermomix Peanut Butter Cookies from Thermomix Bak…
Is there a better combo than peanut butter and chocolate? These quick Thermomix cookies are super quick and super simple! With just a handful of ingredients you can whiz them up in no time.
When we made them we used 90g of xylitol rather than the 175 of golden caster sugar (as a tip from Sophia the Thermomix Baking Blogger from …
: use half of the sugar when first making a recipe) and they were plenty sweet enough for us. Also, we didn’t have any choc chips in the house so we cut up a block of Lindt 80% dark chocolate with a sharp knife. This meant that the choc chips were also soy and dairy free.
Tip for making these super quick: We rolled the cookie dough up in baking paper and froze it. This worked great as we could simply slice it up and bake it and it worked an absolute treat!
Recipe 3 – Healthy Banana Bread Bickies
Finally, we have a new recipe on the blog. We created this specifically for this podcast. We were looking for a cookie that would be yummy but also healthy. These little pillows of banana bread cookie goodness are delicious and they aren’t going to send your blood sugar all over the shop.
Quick tip: grinding linseeds is a pain if you don’t have a Thermomix! And yet buying them ground means the oils will probably be rancid. So make the most of your mixer and grind your own!
