In Episode 92, your host, Lee Uehara (way-ha-rah) takes you through making your own deli meat using chicken breasts. She does mention bologna, but says that’s another process for another episode.

Basically, all you’re doing is slow-roasting a marinated piece of meat! (The basic idea is the same for most types of meat, BTW.)

RECIPE:Chicken breastsMarinade: honey, onion powder, garlic powder, salt and black pepper. Let it hang out in the fridge for at least one day.Then, slow roast them for about 1.5 hours at 260 degrees F. Check the internal temperature so that it’s at least 166 degrees F.

Lee’s trick to slicing the meat into thin slices: put the cooled-down chicken breasts in the freezer for at least 45 minutes. You don’t want to freeze them but get them to be firmer, more solid for easier slicing. *That’s especially if you’re using a knife and not a meat slicer or slicer attachment with your food processor.

For bologna, which will be talked about in another episode, basically you’ve got to make a meat pureé with cold water and about a 1:1 ratio of meat to fat. You’ll need casing, which you can get at Sausage Maker. Then, you can smoke it, roast it with a water bath or cook it in a hot water bath. The secret ingredients for bologna are mace, nutmeg and possibly coriander.
