Mickey’s journey started off 5 or 6 years ago, when she was diagnosed with Hashimoto’s and Celiac diseases. She immediately went on a gluten-free diet, but ended up having a serious health crisis in the months following her diagnosis. Her doctors kept telling her that they wouldn’t treat her with conventional medicine until it was confirmed she had Hashimoto’s, so she began doing her own research and started following a Paleo diet. This led to her starting her blog, and is also how she met Angie.
Angie started having symptoms shortly after he daughter was born in her 20s, but did not get a primary diagnosis of Celiac disease until she was in her 30s. She had gone so long without knowing what was going on with her body, that she was malnourished, which led to other mental and emotional problems.
She tried adopting a gluten-free diet, but it wasn’t enough, she actually got sicker. Her antibodies increased, which led to her own research, since (again) conventional medicine could not help. Within 24 to 48 hours of following the autoimmune protocol, her anxiety and other mental health issues began to melt away.
What is Autoimmune Protocol?
It is an elimination and reintroduction diet. You eliminate certain food groups that are leading to inflammation and other problems with autoimmune disease. After you’ve gone through a healing period, you can begin re-introducing what you can personally tolerate or continuing to remove what you cannot tolerate.
The foods you eliminate in the beginning are ALL grains, including: wheat, barely and rye. All legumes, all dairy, all eggs, nuts and seeds (including coffee and chocolate), nightshade vegetables, and you focus on adding in nutrient dense foods, like fermented foods, organ meats, and fish, and lots of good quality animal fats, and good quality olive oil.

Angie’s encouraging our listeners to start a food, mood and symptom journal. It’s a great way to track your health overall, so that you know when your inputs are making you feeling really great (food or exercise), or what’s not making you feel good.
Start with a few simple metrics, and just track those for a little while. And, then use a scale of 1-10 to rate each area, this makes it easy to track patterns over time.
