Toshikoshi means to jump or leap from a position to another, for which my Japanese friend told me; the dish has to be cooked in the most simple form with any extravagant/additional additions. The dish should include Soba ( Buckwheat ) noodles obviously bathed in a Dashi broth so as to ensure that your noodles are cut easily while eating on new year. Such a method signifies that problems/ obstacles can be sheared and let go prior to to leaping into a new year.
