Jenny Du is an engineer and chemist who serves as Senior Vice President of Operations at Apeel, a company developing plant-derived edible barriers that extend the shelf life of fresh produce to reduce food waste and conserve natural resources. She has held several leadership positions at Apeel, including Vice President of Operations and Director of Extraction Engineering. Before joining the company, Du was a Postdoctoral Researcher at the University of California, Santa Barbara, where she worked on bioelectronic devices and renewable energy. She earned a PhD in Chemistry and a Bachelor of Science in Engineering Chemistry from Queen’s University, conducting research on nanostructured materials for environmental applications. Her early career experience includes an engineering internship at DuPont Canada, where she focused on polymer electrolyte membrane fuel cells.
