This episode's cocktail by Elliot, a French 75 riff called the Poire 75:
¾ oz. Clear Creek Pear Brandy
¼ oz. Bombay Sapphire London Dry Gin
½ oz. fresh squeezed lemon juice
¼ oz. simple syrup
1 dash Regan’s Orange Bitters
1 ¾ oz. dry champagne or sparkling wine
Combine all ingredients except the champagne in a shaker with ice and shake until cold. Pour into a champagne flute and top with champagne. No garnish.
