We sat down with Chef Shirel Berger, a Tel Aviv-based vegan chef known for her artistic and flavorful vegan dishes and her dedication to sustainability. Shirel was recently listed as one of Forbes Israel's "2018 Under 30" and is in the final stages of opening her new restaurant in Tel Aviv's Levinsky Market after the success of her critically acclaimed vegan pop-up - Miss Kaplan.
We spoke with Shirel about her evolving relationship with Veganism, the importance of buying from local farms and suppliers, and being at the front end of a food movement that is still very new to Israel.
