Cubby James grew up working in the restaurant industry, but never in a million years thought he would start a business in that industry. Initially his plan was to work in an NBA front office, but when that dream didn't work out he found himself traveling the world for a while until he had the idea for Cubby's in his 30s. After working with someone who could very well be a mob boss (his words not mine) to learn about Italian beef, he launched Cubby's in Provo before expanding to multiple locations and creating a multimillion dollar restaurant.
