For many years, our family at The 5 Acre Homestead have stretched whole chickens and have been able to use them for up to four meals. Check out how we have done this and also why locally sourcing our chicken meat is important to us.

Recipes:

Meal #1:

Whole Chicken in a Slow Cooker

1-5lb Whole Chicken
1/8 c. water
2 cups carrots
2 cups celery
1 cup onion
Season as you see appropriate.

Place all ingredients in a slow cooker and place on High for 3-4 hours until thermometer placed in the thickest part of the thigh reaches 165 degrees.
Serve chicken with vegetables.

Meal #2:

Homemade Chicken Stock
Bones, Skin and Extra Meat from picked over whole chicken
Splash Apple Cider Vinegar with mother
Vegetables of choice (carrots, celery, onions, etc)
2-4 Quarts of cold water

Place all remaining parts of the whole chicken into a slow cooker. Pour a splash of apple cider vinegar on top. Add vegetables (your choice in what you would like to add), and add cold water. Cover and cook on high for 24 hours. After 24 hours, drain the stock through a strainer and cheese cloth or coffee filters into a larger bowl or pot. Let sit until cool and skim any fat off the top of the stock. Use stock for the following soup.

Chicken Taco Soup

Chicken Stock from Whole Chicken or 2 boxes of Chicken Stock
2 cups chicken
1 cup rice
1 can corn or 1 cup frozen corn
1 cup black beans
2 handfuls egg noodles
Season as you see appropriate
Sour Cream
Cheese
Tortilla Chips

Place stock, chicken, rice, corn and black beans in a large pot. Bring to a boil. Add egg noodles and boil for 2-3 minutes until noodles are soft. Serve with sour cream, cheese, or tortilla chips (all optional).

Meal #3:
Leftovers from Meal #2

Meal #4:

Chicken Salad Sandwich

1-2 cups shredded chicken
2-3 boiled eggs
1/2 diced dill or sweet pickles
2 cups mayo
1/8 tsp mustard
1/8 tsp apple cider vinegar

Mix all ingredients together in a bowl and serve on bread, with chips, on a lettuce salad, or on its own with a fork.
