Peter Lemos is a chef from Los Angeles who’s worked at great spots all over town, but recently went in on his own venture, a small sandwich shop in LA’s Frogtown neighborhood.  It’s called Wax Paper, and features specialty sandwiches named after NPR hosts and it’s also delicious. Peter was also a contestant on CHOPPED, so thats tight.  We chat with him about his chef journey, what it took to open his own place, what goes down behind the scenes at Chopped, and so much more!
